Even moisture, never waterlogged. Mulch the surface with dry leaves or straw to slow evaporation.

Full winter sun is fine December–February; give afternoon shade in the shoulder months.

Richer than arugula likes — add generous compost. pH near neutral.

Pick outer leaves once they reach palm size. A single sowing gives 3–4 pickings.

◆True spinach fails above ~26°C. For a summer 'spinach', grow molokhia or Malabar spinach instead.
◆Soak seeds overnight before sowing to speed up germination in warm October soil.
